Dynamite MC is hosting a unique five-course dinner experience at The Collab restaurant on Wednesday 6th November, with dishes inspired by global music festivals

New Walthamstow bar and restaurant The Collab will open its doors for a dinner party hosted by award-winning rapper Dynamite MC next week.
On Wednesday 6th November, the rapper-turned-sommelier will hold a “Famous Festival Five” dinner, with meals inspired by some of the world’s most legendary music festivals.
Also known in winery circles as Domm the Somm, Dynamite will guide guests throughout the evening, dropping stories and insights as people make it through each of the five courses and set wines.
The five-course menu, crafted by chef Paul Human, pays tribute to Reading & Leeds, Fuji Rock, Rhythm and Vines, Burning Man, and Glastonbury.
Starting off with a crispy, golden-fried chicken brined in buttermilk served with Reading Sauce, diners will then tuck into salmon sashimi drizzled with a yuzu dressing and topped with caviar. The latter dish will be paired with a wine made from Japan’s indigenous Koshu grape in a homage to the country’s Fuji Rock festival.

The third dish of the night will be succulent lamp lollipops glazed with traditional New Zealand mint sauce served alongside the classic Kiwi snack of creamy onion dip with chips before guests are presented with the fiery flavour of refried black beans, charred corn pico de gallo, ancho queso, and warm corn tortillas in a nod to Burning Man.
Best is served until last with a Glastonbury inspired dessert of Somerset apple burnt cheesecake, paired with Walthamstow winery Renegade’s Esi’ Rose, crafted from grapes grown under a tent.
Located at 198 Hoe Street, The Collab is a restaurant founded by chef Paul Human and Signature Brew head Sam McGregor. The restaurant’s ever-changing menu is centred around collaborations between world-famous chefs, musicians, actors and brewers.
